Mama Carp’s “GP”tini (..Guilty Pleasure)

This martini has been my signature drink for many years.I always keep these ingredients on hand; Dekuyper Watermelon Pucker, Dekuyper Island Punch Pucker and Absolut Citron Vodka.

Super easy, 1 shot of each shaken vigorously with ice, pour into martini glass and top it off with a fresh lemon slice. So, is it a “guilty pleasure” to drink it or could it be to serve it?!!

Taco Dip

The thought of showing up at a party with just a bag of chips have you running scared?


Bring this taco dip & impress your friends- it’s simple and delicious. You can make this using many short cuts or go all out – shred your own cheese, use fresh romaine & add some thinly sliced scallions to really show it off. Don’t own a 16” platter? Go foil and throw it when the parties over. This taco dip has been devoured by many little goblins at my house and you’ll be howlin’ at the moon with all the compliments!

It’s That Time Of Year Again!

I LOVE this time of year – Minnesota at its finest! Falling leaves, crisp autumn air & lots of crackling bonfires with your favorite friend’s. Be sure to whip up several batches of my Northwoods Apple Cider, its great hot or cold! Also keep it on hand for my favorite fall cocktail Jameson Cidertini’s. This cider recipe is also used in my turkey brine for Thanksgiving- Apple-Brined Grilled Turkey Recipe        -Cheers!!!DSC_4318Northwoods Apple Cider

4 cups water
1 cup brown sugar
4 teaspoons whole cloves
2 teaspoons whole all spice
½ teaspoon ground coriander
½ teaspoon nutmeg
4-6 cinnamon sticks
128 oz. apple cider
Combine everything but the apple cider in a 2 quart sauce pan.Heat to boiling, reduce heat. Simmer with cover about 20 minutes. Strain twice. Add to apple cider in large pot- heat through.

Mama Carps “Lemon Drop” Martini

DSC_0195Makes two AMAZING martini’s….

  • 1 Tablespoon regular or super fine sugar
  • 1 Tablespoon sparkling white sugar – opt. but gorgeous!
  • 1 good sized lemon
  • 1 1/2 Jiggers lemonade
  • 1 1/2 Jiggers simple syrup*
  • 1 1/2 Jiggers Limoncello
  • 3 Jiggers Absolut CitronVodka
  • Ice

Cut lemon in half then with each half cut a pretty slice for garnish- set aside.

Combine your sugars on a plate; using a remaining lemon half, coat your two rims of your martini glasses quickly coating the wet rim in the sugar evenly- set aside.

Using a citrus reamer, juice the remaining lemon halves into your martini shaker.

Add your lemonade, simple syrup, Limoncello & Citron vodka. Add ice, cover and shake really well.

Pour the amazing contents into your glasses and float your lemon slice on top.

* Combine 1 cup sugar with 1 cup water on stove until sugar has dissolved- store in fridge for 2 weeks

Just in time for Easter- I was messing in the kitchen and this is what I came up with ❤

revised 2/11/2014

  • ¾ cup packed brown sugar
  • 6 Tablespoons butter
  • 3 Tablespoons light corn syrup
  • ¼ teaspoon baking soda
  • 4 oz. pretzel sticks ( I used ½ of an 8 oz. bag of gluten free pretzels by Glutino)
  • 1- 16 oz. jar of honey roasted peanuts
  • 1 -14.25 oz. box chocolate flavored Chex cereal (gluten free)
  • 1 cup Kraft Jet-Puffed Mallow Bits
  • 1- 12.60 oz. bag of “bunny mix” M&M’s
  • 1/8 cup reduced fat Skippy  creamy peanut butter
  • 8 oz.(1/2 package) of CandiQuik vanilla flavored chocolate

In a large plastic bowl- combine Chex cereal, pretzels and nuts; stir & set aside.

In a saucepan melt the first three ingredients together on stove- bring to a boil making sure that all the sugar has dissolved. Add baking soda and stir- mixture will be HOT! immediately pour over Chex mixture and stir well.  Microwave mixture for three minutes, stirring every minute. Line counter with wax paper and spread mix out to cool for a couple of minutes. Sprinkle generously with Kraft Jet-Puffed Mallow Bits & the M&M’s. Melt the white chocolate and peanut butter for approximately 2 minutes in the microwave, stirring halfway. Drizzle white chocolate/peanut butter mix on top of “HTGT” mixture. When hardened, break into pieces and place in bowl to serve. Also darling in individual treat bags with a ribbon & tag ❤ Take advantage of all the holiday M&M’s throughout the year and change up the nuts as well!! We make this for every gathering : )

Mama Carp’s Jameson Cidertini

Perfect for fall celebrations – makes 4 martinis

  • 1 cup fresh cider – I use my Northwoods Apple Cider recipe
  • 4 oz. Jameson Irish Whiskey
  • 2 Tablespoons real maple syrup
  • Juice from 1 lemon
  • 4 cups ice
  • Sugar for rim &  garnish with fresh apple slices &cranberries

Cut lemon in half and use to rim your martini glass with sugar. Put the cider, whiskey, maple syrup, lemon juice and ice in blender and blend 15 seconds or to desired consistency. Garnish with a slice of fresh apple, apple with a cranberry or a few frozen cranberries tossed in bottom. This can also be made in a traditional martini shaker.

Chocolate Chip Cheese Ball

  • Ready In: 3 hr 20 min

“A sweet switch from the usual cheese ball. Serve with graham crackers or chocolate wafers.”

Ingredients

  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup butter, softened
  • 3/4 cup confectioners’ sugar
  • 2 tablespoons brown sugar
  • 1/4 teaspoon vanilla extract
  • 3/4 cup miniature semisweet chocolate chips
  • 3/4 cup finely chopped pecans

 

Directions

  1. In a medium bowl, beat together cream cheese and butter until smooth. Mix in confectioners’ sugar, brown sugar and vanilla. Stir in chocolate chips. Cover, and chill in the refrigerator for 2 hours.
  2. Shape chilled cream cheese mixture into a ball. Wrap with plastic, and chill in the refrigerator for 1 hour.
  3. Roll the cheese ball in finely chopped pecans before serving.
