Valentine Shortbread Puzzle Cookie

  • 3/4 cup unsalted butter- softened
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons water
  • 2 cups flour
  • 1 oz. (1 square) semi-sweet chocolate, melted

Mix butter & sugar thoroughly; add vanilla, salt and water . Mix in flour a little bit at a time- mixture will be dry and crumbly.  Form dough into a disc reserving 1/4 cup. To the 1/4 cup of reserved dough add melted chocolate and mix until color is even. Wrap the doughs with plastic separately and chill well. Roll out dough onto parchment paper to form an 8” x 10” rectangle (or heart shape) Preheat oven to 350 degrees.
Work the chocolate dough with your hands until pliable enough to roll into a 1/4” rope. (If hard to roll, sprinkle on a few drops of water and work in)
Use chocolate dough to make a border and a sweet message. Press on top of cookie and bake for 22 minutes.
