After a long winter of cold and snow, springtime is more than welcome!
The thought of showing up at a party with just a bag of chips have you running scared?
Bring this taco dip & impress your friends- it’s simple and delicious. You can make this using many short cuts or go all out – shred your own cheese, use fresh romaine & add some thinly sliced scallions to really show it off. Don’t own a 16” platter? Go foil and throw it when the parties over. This taco dip has been devoured by many little goblins at my house and you’ll be howlin’ at the moon with all the compliments!

Today I am CELEBRATING! It’s my 2 year anniversary of Mama Carp & company and I have had a wonderful time here with you!

So no doubt I’ve been a little busy as always…August I entered my Mistral quilt into my first ever quilting competition. I became a finalist in the MQX Quilt Festival and Wednesday September 24th I found out I took second place in the Custom Heirloom Show category! My quilter, Norma Riehm & I were beyond thrilled!!! I can now check off National award winning quilter from my bucket list- YAY!! Our marks were awesome and the whole experience was incredible! A huge thank you to Janet-Lee Santeusanio for encouraging me- I definitely caught the competition bug…. Not bad for Mistrals first ride! My family and I celebrated with champagne & dinner at Acqua one of my favorite restaurants ❤
I LOVE this time of year – Minnesota at its finest! Falling leaves, crisp autumn air & lots of crackling bonfires with your favorite friend’s. Be sure to whip up several batches of my Northwoods Apple Cider, its great hot or cold! Also keep it on hand for my favorite fall cocktail Jameson Cidertini’s. This cider recipe is also used in my turkey brine for Thanksgiving- Apple-Brined Grilled Turkey Recipe -Cheers!!!Northwoods Apple Cider
4 cups water
1 cup brown sugar
4 teaspoons whole cloves
2 teaspoons whole all spice
½ teaspoon ground coriander
½ teaspoon nutmeg
4-6 cinnamon sticks
128 oz. apple cider
Combine everything but the apple cider in a 2 quart sauce pan.Heat to boiling, reduce heat. Simmer with cover about 20 minutes. Strain twice. Add to apple cider in large pot- heat through.

Many years ago a customer shared this with us girls at my Mom’s craft store. One look at the ingredients and we knew we just had to try it- my family has been making it ever since!
- 3 eggs
- 1 cup extra virgin olive oil
- 1 cup sugar
- 1 cup brown sugar
- 1 Tablespoon maple flavoring*
- 2 cups shredded zucchini
- 2 1/2 cups flour, unsifted
- 1/2 cup toasted wheat germ
- 2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 cup chopped walnuts
Beat the eggs, then add oil, sugars, and maple flavoring combine until foamy. Stir in zucchini and all dry ingredients- mix just until combined. Stir in nuts.
Using Pam spray- coat 4 mini loaf pans, spoon in batter; sprinkle with sugar. Bake at 350 degrees for 40- 45 minutes. Check with toothpick to see if you need additional time. If making 1 large loaf, follow instructions above and bake for 1 hour.
*My favorite Maple extract is Mapleine by Crescent (in a bright blue box) – I recently found it at WalMart.
