Swedish Ice Box Cookies
- 1 cup brown sugar
- 1 cup white sugar
- 1 cup butter
- 1 cup shortening
- 3 eggs
- 1 teaspoon baking soda dissolved in 1 Tablespoon water
- 1 teaspoon cinnamon
- 5 cups flour
- ½ cup walnuts- chopped
Mix sugars, butter, shortening & eggs until homogenous.
Add eggs & baking soda- mix. Add cinnamon, flour & walnuts- stir just until blended.
Divide mixture into 4 portions onto wax paper. Form into a log approximately 1 ¼” high by 3” wide.
Refrigerate overnight. Cut the logs into ¼” slices and bake fairly close together for 12 minutes at 350⁰.
