It’s That Time Of Year Again!

I LOVE this time of year – Minnesota at its finest! Falling leaves, crisp autumn air & lots of crackling bonfires with your favorite friend’s. Be sure to whip up several batches of my Northwoods Apple Cider, its great hot or cold! Also keep it on hand for my favorite fall cocktail Jameson Cidertini’s. This cider recipe is also used in my turkey brine for Thanksgiving- Apple-Brined Grilled Turkey Recipe        -Cheers!!!DSC_4318Northwoods Apple Cider

4 cups water
1 cup brown sugar
4 teaspoons whole cloves
2 teaspoons whole all spice
½ teaspoon ground coriander
½ teaspoon nutmeg
4-6 cinnamon sticks
128 oz. apple cider
Combine everything but the apple cider in a 2 quart sauce pan.Heat to boiling, reduce heat. Simmer with cover about 20 minutes. Strain twice. Add to apple cider in large pot- heat through.

Perfect for fall celebrations – makes 4 martinis

  • 1 cup fresh cider – I use my Northwoods Apple Cider recipe
  • 4 oz. Jameson Irish Whiskey
  • 2 Tablespoons real maple syrup
  • Juice from 1 lemon
  • 4 cups ice
  • Sugar for rim &  garnish with fresh apple slices &cranberries

Cut lemon in half and use to rim your martini glass with sugar. Put the cider, whiskey, maple syrup, lemon juice and ice in blender and blend 15 seconds or to desired consistency. Garnish with a slice of fresh apple, apple with a cranberry or a few frozen cranberries tossed in bottom. This can also be made in a traditional martini shaker.

Wild Rice Hot Dish

  • 1 cup raw wild rice
  • ½ pound bacon, diced & fried crisp
  • 1 medium onion- diced
  • 1 cup celery- diced
  • 1 can Golden mushroom soup
  • 1 can water
  • 1 teaspoon salt
  • 1 container fresh mushrooms- sliced
  • ½ green pepper- diced

Cook rice as in basic recipe (below). DO NOT DRAIN. Fry bacon & pour off all but 2 Tablespoons of fat. Sauté mushrooms, onions, celery & green pepper in the left over bacon drippings. Mix all ingredients together. Put in greased casserole. Bake at 350⁰  for 1 ½ hours. Cover for the first half of baking, stirring occasionally, removing cover near the end of baking. Add water as needed. Serves 8-10.

Basic recipe for wild rice:

  • 1 cup wild rice
  • 4 cups water
  • 1 teaspoon salt

Rinse wild rice under running water using a strainer, drain. Bring wild rice, water and salt to boiling in a heavy saucepan; reduce heat and simmer, covered, until kernals open and are tender but not mushy, 45-55 minutes. Drain. 6-8 servings (3-4 cups)
